Ingredients

  • 12 oz chickpeas
  • 1⁄2 cup chopped leeks
  • 2 cups spinach (finely chopped)
  • 1⁄8 lb chicken boneless breast pieces (cut in small bite-sized pieces)
  • 1 tomato (chopped)
  • 1 tablespoon sesame seeds
  • 1 garlic clove (minced)
  • 1⁄4 teaspoon ground ginger
  • 1 tablespoon Italian salad dressing
  • 1 tablespoon lemon juice
  • 1⁄2 teaspoon red pepper flakes
  • Salt as needed
  • Black pepper as needed
  • 1 tablespoon olive oil
  • Fresh basil for garnishing

Directions

  1. Take about 1⁄2 cup water in a pan and add spinach. Add about 1⁄4 teaspoon of salt and boil for 2 to 3 minutes until the leaves are wilted. Remove from heat and set in a colander.
  2. Heat olive oil in a frying pan and add chicken. Sauté for 2 to 3 minutes, then add minced garlic, ground ginger, and red pepper flakes. Sauté for a few more seconds. Season with salt and black pepper. When the chicken is cooked through, remove from heat and set aside.
  3. Mix together all the ingredients in a bowl and add the prepared chicken and spinach. Toss well to coat and garnish with fresh basil.
