Ingredients

  • 2 cups baby spinach
  • 1 avocado (diced)
  • 1 sweet potato (cubed)
  • 1 tablespoon wheat germ oil
  • 1⁄2 cup snow peas
  • 1⁄4 lb boneless chicken breast (diced)
  • 1 tablespoon Dijon mustard
  • 1 tablespoon lemon juice
  • 1⁄4 cup sunflower seeds
  • Salt as needed
  • Black pepper as needed
  • 1⁄2 teaspoon garlic powder
  • 1 garlic clove (minced)
  • 1⁄4 teaspoon ground ginger
  • 1 red apple (diced)
  • 1 tablespoon olive oil

Directions

Heat olive oil in a frying pan and add chicken chunks. Sauté for 2 to 3 minutes, then add minced garlic and sauté for a few more seconds until aromatic. Season with salt and black pepper and remove from heat when cooked.

Boil water and add sweet potato. Cook for 6 to 7 minutes until the potatoes are tender. Drain the water and set the potatoes in a colander to remove excess water.

Make the salad dressing by mixing together wheat germ oil, garlic powder, ground ginger, salt, black pepper, Dijon mustard, lemon juice, and sunflower seeds until a smooth paste is formed.

Mix together the snow peas, sweet potatoes, avocado, spinach, apple, and chicken cubes, and stir the dressing all over the salad. Toss well and serve immediately.
